Root Beer Ice Cream

Servings: 4 Cups

Ingredients
  

Root Beer Flavor
  • 3 ½ tsp Watkins Root Beer Concentrate OR Hires Root Beer Extract
Ice Cream Base Mix
  • 1 cup Whole milk (=240 g)
  • 2 Whole Pasteurized Eggs (Large eggs)
  • 3/4 cup Sugar (=144 g)
  • Dash Salt
  • 2 cups Heavy whipping cream (=444 g, add later )

Root Beer Flavor
  1. Measure Root Beer Flavoring
Ice Cream Base Mix
  1. Put base mix ingredients except whipping cream in blender.
  2. Add Root Beer Flavor to blender. Blend on High for 1 minute.
  3. Add whipping cream. Blend on Medium setting for 30 seconds.
  4. Freeze in ice cream machine.

Notes

We also tried McCormick Root Beer Concentrate, regular A&W Root Beer, and A&W Root Beer powdered flavoring. None of them tasted good and were icy. We could not find A&W Root Beer Concentrate.
Watkins Root Beer Concentrate is our first choice. It has a good root beer flavor. Note that it is clear, so you need to add some brown food coloring or be content with your ice cream looking like Vanilla but tasting like Root Beer.
Hires Root Beer Concentrate is not as good a flavor as Watkins, but it is pretty good and does have a rich brown color.
