Peppermint Candy Ice Cream

Servings: 5 cups

Ingredients
  

Peppermint Candy
  • ½ cup Peppermint candy or candy canes, crushed (6 candy canes @ 14 g each = 84 g, add later)
Peppermint Flavor
  • 1.25 tsp Watkins Pure Peppermint Extract
  • 2 drops Red food coloring (Optional)
Ice Cream Base Mix
  • 1 cup Whole milk (=240 g)
  • 2 Whole pasteurized eggs (Large eggs)
  • 3/4 cup Sugar (=144 g)
  • Dash Salt
  • 2 cups Heavy whipping cream (=444 g, add later )

Instructions
 

Peppermint Candy
  1. Remove plastic wrapping from candy canes, place candy canes in double quart Ziplock bags and crush with rubber mallet. Set aside.
Peppermint Flavor
  1. Measure peppermint flavor
Ice Cream Base Mix
  1. Put all ice cream base mix ingredients except whipping cream into blender. Add peppermint flavor, and food color if desired. Blend on High for 1 minute.
  2. Add whipping cream. Blend on Medium setting for 30 seconds.
  3. Freeze mixture in ice cream machine.
Combine
  1. Add crushed candy canes during last few seconds of freezing.

Notes

I have found that everyone has different flavor preferences. We tried a number of different Peppermint flavorings. All of them vary widely in taste, concentration, price, ease of use, and availability. Watkins was our preference, but you may find other flavorings that you prefer.
