Peach Ice Cream

Servings: 7 cups

Ingredients
  

Peach Flavor
  • 3 ¾ cups Fresh ripe peaches (=487 g, about 4 peaches)
  • ¼ cup + 1 tsp Sugar (=71 g)
  • 1.4 g Citric acid
Ice Cream Base Mix
  • 1 cup Whole milk (=240 g)
  • 2 Whole pasteurized eggs (Large eggs)
  • 3/4 cup Sugar (=144 g)
  • Dash Salt
  • 1 ½ cups Heavy whipping cream (=333 g, add later)

Instructions
 

Peach Flavor
  1. Peel and pit peaches. Mash peaches with a potato masher.
  2. Add sugar and citric acid, mix well.
  3. Refrigerate for several hours.
  4. Use strainer and metal spoon to separate peach juice from pulp. Set pulp aside for later.
Ice Cream Base Mix
  1. Put Ice Cream Base Mix ingredients except whipping cream in blender. Add strained Peach Juice but not Peach Pulp. Blend on High for 1 minute.
  2. Add whipping cream. Blend on Medium setting for 30 seconds.
  3. Freeze in ice cream machine.
Combine
  1. Add Peach Pulp to ice cream freezer during last minute of freezing.

Notes

Use the ripest, sweetest peaches you can find.
We reduced the amount of whipping cream in our base mix for this recipe from 2 cups to 1 1/2 cups because of the addition of so much peach juice.
