Lychee Ice Cream

Servings: 10 cups

Ingredients
  

Lychee Flavor
  • 2 ea. 20 oz cans Lychees
  • 1 ea. 14 oz can Sweetened Condensed Milk
Ice Cream Base Mix
  • 1 cup Whole milk (=240 g)
  • 2 Whole pasteurized eggs (Large eggs)
  • 1/2 cup sugar (=96 g)
  • Dash Salt
  • 2 cups Heavy whipping cream (=444 g, add later)

Instructions
 

Lychee Flavor
  1. Drain Lychees, discard juice.
  2. Put drained Lychees in blender, pulse a couple of times.
  3. Add Sweetened Condensed Milk.
Ice Cream Base Mix
  1. Add base mix ingredients except whipping cream into blender. Blend on High for 1 minute.
  2. Add whipping cream. Blend on Medium setting for 30 seconds.
  3. Freeze in ice cream machine.

Notes

Canned Lychees are available in Asian grocery stores and the Asian Food section of some large grocery stores.
We reduced the sugar in our Ice Cream Base Mix from 3/4 cup to 1/2 cup because of the can of sweetened condensed milk added to the Lychees.
