Key Lime Pie Ice Cream

Servings: 4 cups

Ingredients
  

Pie Crust
  • 1 Graham cracker pie crust
Key Lime Flavor
  • ½ cup + 1 Tbsp Nelle & Joe’s Key West Lime Juice or equivalent (=136 g)
  • Zest from 1 lime
  • 2 Tbsp Sugar (=31 g)
  • 1 drop Green food color (Optional)
  • 2 drops Yellow food color (Optional)
Ice Cream Base Mix
  • 1 cup Whole milk (=240 g)
  • 2 Whole pasteurized eggs (Large eggs)
  • 3/4 cup Sugar (=144 g)
  • Dash Salt
  • 2 cups Heavy whipping cream (=444 g, add later)

Instructions
 

Pie Crust
  1. Put graham cracker pie crust in a Ziplock bag and roll with a rolling pin to crush into small pieces. Set aside.
Key Lime Flavor
  1. Measure Key Lime Flavor ingredients
Ice Cream Base Mix
  1. Put base mix ingredients except whipping cream into blender. Add Key Lime Flavor ingredients. Blend on High for 1 minute.
  2. Add whipping cream. Blend on Medium setting for 30 seconds.
  3. Freeze in ice cream machine.
Combine
  1. When the ice cream is finished freezing, add the crumbled pie crust crumbs and let turn for a few seconds to mix in.
