Cookie Dough Oreo Ice Cream

This ice cream is made in several steps: Make the cookie dough, make the Oreo crumbs, make Sweet Cream Ice Cream, and then combine.
Servings: 6 cups

Ingredients
  

Cookie Dough
  • 1 cup plus 2 Tablespoons Flour
  • ½ cup Butter
  • ½ cup Brown sugar
  • ¼ cup Milk
  • 1 teaspoon Vanilla extract (4.3g)
  • 1 cup Mini chocolate chips
Oreos
  • 14 Oreos
Ice Cream Base Mix
  • 1 cup Whole milk (=240 g)
  • 2 Whole pasteurized eggs (Large eggs)
  • 3/4 cup Sugar (=144 g)
  • Dash Salt
  • 2 cups Heavy whipping cream (=444 g, add later )

Instructions
 

Cookie Dough
  1. You can make the following cookie dough recipe from scratch which tastes much better, or you can use 250 g of Costco Eat Pastry Chocolate Chip Cookie Dough, frozen and finely chopped.
  2. Preheat oven to 350 degrees. Evenly spread the flour on a cookie sheet and bake for 5 minutes to kill bacteria since the cookie dough will not be baked.
  3. In a large bowl cream the butter and brown sugar. Add the milk and vanilla and mix until thoroughly incorporated.
  4. Reserve 2 Tbs. of the baked flour for later, and add the remaining 1 cup of baked flour to the other ingredients and mix.
  5. Gently fold in the mini chocolate chips.
  6. Flatten dough in a thin (~1/2” thick) layer on a silicone sheet on a cookie sheet. Freeze dough for a minimum of one hour. Chop into ½” cubes. Dust lightly with the 2 Tbs. of baked flour to keep the chopped cookie dough from clumping together. Return chopped dough to freezer until ice cream is done. Makes approximately 365 grams of dough.
Oreos
  1. Twist the Oreos apart and remove and discard the filling. Put the Oreo wafers in a sealed baggie and roll them with a rolling pin to crush. Set aside
Ice Cream Base Mix
  1. Put base mix ingredients except whipping cream in blender. Blend on High for 1 minute.
  2. Add whipping cream. Blend on Medium setting for 30 seconds.
  3. Freeze in ice cream machine.
Combine
  1. After the ice cream finishes freezing, pour it into a bowl. Mix in the crushed Oreo crumbs and the chopped frozen cookie dough.

Notes

There are some pre-made cookie doughs in the store that are safe to eat raw, and others that are not. Be sure if you buy cookie dough that it says "safe to eat raw".
