Ice Cream Base Mix #2

This is our second favorite homemade ice cream base mix. It only has 4 ingredients, and doesn’t contain eggs which is good for those with egg allergies. However, it tastes a bit greasy due to all of the Half-and-half and whipping cream, and it does not keep as well in the freezer as our Base Mix #1, so should be eaten right away. It comes from the Ben & Jerry’s Homemade Ice Cream & Dessert Book, p. 29. We added a dash of salt.

Ice Cream Base Mix #2

Servings: 4 cups

Ingredients
  

  • 3/4 cup Sugar (=144 g)
  • 2/3 cup Half-and-half (=160 g)
  • Dash Salt
  • 2 cups Heavy whipping cream (=444 g, add later)

Instructions
 

  1. Put base mix ingredients except whipping cream in blender. Blend on High for 1 minute.
  2. Add whipping cream. Blend on Medium setting for 30 seconds.
  3. Freeze in ice cream machine.
