Mango Ice Cream

The secret to this delicious exotic mango ice cream is using the ripest, most delicious mangos available. When you do, this ice cream is so smooth, sweet and satisfying you will feel like you are relaxing on the beach in Thailand.

Mango Ice Cream

Servings: 6 cups

Ingredients
  

Mango Flavor
  • 368 g Fresh mangos (4 medium or 3 large,)
  • 5 tsp Sugar for mangos (= 20 g)
Ice Cream Base Mix
  • 1 cup Whole milk (=240 g)
  • 2 Whole pasteurized eggs (Large eggs)
  • 3/4 cup Sugar (=154 g)
  • Dash Salt
  • 2 cups Heavy whipping cream (=444 g, add later )

Instructions
 

Mango Flavor
  1. Choose as ripe and sweet mangos as possible. Peel, remove seed, and puree mangos in a blender.
  2. Add sugar for mangos.
Ice Cream Base Mix
  1. Put base mix ingredients except whipping cream into blender. Add blended mangos flavor ingredients. Blend on High for 1 minute.
  2. Add whipping cream. Blend on Medium setting for 30 seconds.
  3. Freeze in ice cream machine.
