Fresh Mint Ice Cream

The taste and smell of fresh mint is intoxicating. This homemade fresh mint ice cream is one of my favorites.

Fresh Mint Ice Cream

Servings: 4 cups

Ingredients
  

Fresh Mint Flavor
  • 3 oz Fresh mint leaves (=81 g)
  • 4 drops Green food color (Optional)
Ice Cream Base Mix
  • 1 cup Whole milk (=240 g)
  • 2 Whole pasteurized eggs (Large eggs)
  • 3/4 cup Sugar (=144 g)
  • Dash Salt
  • 2 cups Heavy whipping cream (=444 g)

Instructions
 

Fresh Mint Flavor
  1. Rinse mint leaves. Remove mint leaves from stems. Discard stems.
  2. Chop mint leaves very finely.
Ice Cream Base Mix
  1. Combine all base mix ingredients. Add chopped mint leaves to Base Mix ingredients. Stir well. Cover and let sit in fridge 2-3 hours.
  2. Press mixture through course strainer, using a heavy spoon to get as much mint flavor out of the leaves as possible. Discard leaves.
  3. Add green food color.
  4. Put strained mixture in blender and blend on low for 30 seconds.
  5. Freeze mixture in ice cream machine.

Notes

Excellent fresh mint leaves can often be found in the fresh food section of Asian grocery stores. Many people also grow mint in their yards.
We add the mint leaves to all of the base mix ingredients to soak up as much of the mint flavor as possible. Because the whipping cream is already added to the base mix, we only blend it on Low setting.
