Lemon Blackberry Swirl Ice Cream

When we make ice cream, this is one of the most requested flavors. The Lemon gives it a sweet tartness that tastes like summertime, and the sweet blackberries perfectly balance the lemon to produce an amazing experience!

Lemon Blackberry Swirl Ice Cream

This ice cream is made in several stages, but the end result is worth every step! Make the blackberry puree. Prepare the Lemon Flavor. Then combine the lemon flavor and the ice cream base mix and freeze in an ice cream machine. After the lemon ice cream is frozen, put alternating layers of lemon ice cream and blackberry puree in a container and lightly swirl them together.
Servings: 6 Cups

Ingredients
  

Blackberry Puree
  • 1 ½ cup Whole blackberries (=200 g, Fresh or Frozen)
  • 7 tsp Sugar (=35 g)
  • 3/8 tsp Citric acid (=1.42 g)
Lemon Flavor
  • 3 Tbsp Lemon zest (=12 g, About 3 large lemons)
  • 1 cup Lemon juice and pulp (=221 g, About 3 large lemons)
  • 4 Tbsp Sugar (=53 g)
  • 3 drops Yellow food color (Optional)
Ice Cream Base Mix
  • 1 cup Whole milk (=240 g)
  • 2 Whole pasteurized eggs (Large eggs)
  • 3/4 cup Sugar (=154 g)
  • Dash salt
  • 2 cups heavy whipping cream (=444 g, add later)

Instructions
 

Blackberry Puree
  1. Mash blackberries with a potato masher. Add sugar and citric acid. Mix well. Refrigerate for several hours.
Lemon Flavor
  1. Zest and juice the lemons, add sugar
Ice Cream Base Mix
  1. Put base mix ingredients except whipping cream in blender. Add lemon flavor ingredients. Blend on High for 1 minute.
  2. Add whipping cream. Blend on Medium setting for 30 seconds.
  3. Freeze in ice cream machine.
Swirl in the Puree
  1. After the lemon ice cream is frozen, pour it and the blackberry puree in alternating layers into a container. Swirl slightly with a knife.
  2. Ready to eat, or place in freezer to enjoy later.

Notes

Note: If fresh or frozen blackberries aren’t available you can substitute Triple Berry Blend for blackberries, but it won’t have as intense a taste as the blackberries.
